Con Huevos Opens New Location on Hurstbourne Parkway

Louisville breakfast and lunch concept Con Huevos opened its fourth location on Monday, Oct. 24, at 2125 S. Hurstbourne Pkwy. Mayor Greg Fischer and Con Huevos co-owners Jesus Martinez and Izmene Peredo marked the grand opening with a ribbon cutting.

Con Huevos is a Mexican breakfast and lunch restaurant, influenced by Guadalajara culture. Martinez and Peredo, husband and wife owners, have built Con Huevos around the culture that impacted their upbringing.

“It is a thrill to open our fourth location,” Martinez said in a news release. “When opening the first Con Huevos in 2015, our dream was to bring rich flavors, freshness, and the level of service that is found in Mexican culinary culture to America.”

The new location is decked out with original artwork from Guadalajara native Dalid Orozco, a Mexican graphic design artist, specializing in digital illustration and logo creation. For the mural titled “Los Gallos.” Orozco was inspired by the energy and soul of the roosters, due to their bravery and their discipline to wake up and sing to the blooming of a new day.

“The best way of bringing them to life was illustrating them as alebrijes, one of the most iconic brightly colored Mexican art sculptures,” Orozco said.

The second mural above the bar, titled “Las Fridas” Dalid made a reinterpretation of the iconic painting “Las Dos Fridas” by Frida Kahlo.

Menu specialties include Con Huevos classics such as huevos rancheros, churros, tres leches pancakes, chilaquiles, street tacos, along with their famous Cuban coffee. To further celebrate the newest location, the restaurant has added new beverages and menu items that will launch at all locations in a couple weeks following opening. One of the new cocktail items is a Carajillo - a coffee cocktail, made with Spanish Licor 43, a drink that has become an important part of Mexican culture. New dishes that are both healthier options and vegan friendly, include an avocado toast, a vegan breakfast taco, and a vegan egg sandwich. 

In sharing their newest location, Peredo shares more about her role in the kitchen and what has driven her culinary inspiration.

“My hometown is Guadalajara, the birthplace of Mexican icons like tequila, mariachi, and the origin of most famous Mexican dishes,” Peredo shares.

Her father grew up traveling around the country with her grandfather and without real intention learned the foundations of great cooking, further motivating them to get into the restaurant business.

“As you can imagine, growing up with a father that was the cook at home and famous within his family and friends for his talent, it was natural for me to learn their recipes and the key elements of Mexican cooking,” Peredo added. 

Con Huevos makes everything from scratch daily; there is no freezer at the restaurant. Their philosophy on food is that it should always be fresh and made from scratch. “My main goal leading the kitchen at Con Huevos is building on the recipes of our heritage and bringing to life the reflection of my love for great cooking,” said Peredo.

Both Martinez and Peredo are fully committed to continuing to grow Con Huevos, with hopes of announcing further openings in early 2023.

Hours at the new location will be Monday-Friday, 7:30 a.m.-2:00 p.m. and Saturday-Sunday, 8:00 a.m.-2:30 p.m. The other locations include the original location at 2339 Frankfort Ave., as well as 4938 U.S. Highway 42 and 210 W. Liberty St.
