Swizzle Dinner & Drinks Announces New Orleans-Based Guest Chefs

The Galt House Hotel announced the continuation of its iconic Urban Bourbon Trail Chef Series, welcoming Chefs Amarys and Jordan Herndon as the featured chefs for the quarterly culinary program.

The New Orleans-based couple brings the distinctive flavors of Louisiana fare to Louisville, providing guests with a uniquely flavorful dish that fuses bourbon and Cajun cuisine. Timed to the height of autumn’s bourbon season, travelers and locals seeking to tantalize their palates this fall and winter can try the Herndons’ custom dish which will be available for a limited time at the property’s signature restaurant, Swizzle Dinner & Drinks.

Chef Amarys Koenig-Herndon is the chef and owner of Palm&Pine, a vibrant New Orleans restaurant located in the beloved and historic neighborhood of the French Quarter. Working alongside her husband, Chef Jordan Herndon, the two joined forces to cultivate an extraordinary and dynamic synergy that leveraged one another’s skills and strengths in the kitchen. Following Palm&Pine’s three-year anniversary, the duo was awarded the 2022 StarChefs New Orleans Rising Stars Award, and thereafter, recognized as a 2023 James Beard Foundation Award semifinalist in the ‘Best Chef: South’ category.

Collectively boasting over two decades of experience, the Herndon’s take great pride in their city’s culinary reputation weaving in their unique, individualistic culinary approaches. Drawing influence from New Orleans and its surrounding countries – predominately the Caribbean, Mexico and Central America – the talented chefs prepared a unique-yet-elevated dish for the series; all while balancing Palm&Pine and Swizzle Dinner & Drinks’ distinctive concepts and locale.

The Herndons’ play on a classic New Orleans dish with their featured menu item, Fried Chicken Livers with Bourbon Peach Pepper Jelly. The marinated and flash-fried chicken livers are served alongside pickled shallots, and following assemblage, the livers are topped with bourbon-infused jelly and shredded bourbon-instilled foie gras butter; creating a harmonious blend between salty and sour flavors.

Perched on the 25th floor of The Galt House Hotel, Swizzle Dinner & Drinks boasts panoramic river and city views and provides authentic Louisville cuisine and one hundred types of bourbons. Guests are invited to try Co-Chefs Amarys and Jordan Herndon’s unique bourbon-inspired dish, alongside a variety of signature dinner, drink and dessert specialties.

The dish will be featured in Swizzle from October 1 – December 31, 2023. Culinary enthusiasts in the Louisville area can experience the Herndons’ dish firsthand at an exclusive, intimate pop-up dinner hosted by the chefs, featuring select bourbon pairings at The Galt House on October 12. Announcements on upcoming dishes for future participating chefs are to be announced on a rolling basis.
