Mayan Street Food Saying Farewell to Service at Gravely Brewing
Only a few days remain to enjoy a salbute, burrito or quesadilla at Mayan Street Food, the food truck on-site at Gravely Brewing Co. The operation will close for good at the end of the year.
A sister concept to Mayan Street Food was founded as a food truck serving street food originating from Chef Bruce Ucán’s native Yucatan peninsula. Gravely sought out Mayan as a food partner when the brewery opened in 2017, and the food truck concept also paid homage to Ucán’s start as a food truck operator in 1996. That initial food truck was one of the first in Louisville.
Since it opened the operation at Gravely, Mayan Café Catering has grown more than five times over. Mayan Cafe now works at more than 20 preferred catering venues around the city and specialize in bringing restaurant quality food to events.
“Chef Bruce Ucan and Anne Shadle are legends in the Louisville culinary community, and I am beyond fortunate to have worked alongside them throughout the years,” brewery co-founder Nathaniel Gravely said. “Watching Mayan Street Food and their entire team captivate taste buds and add such an authentic element into Gravely has been nothing short of sensational.”
“We have truly enjoyed working with Nathaniel and his whole team over the last 5+ years,” said Ucán and co-owner/GM Shadle in a statement. ”It’s been so great to expand our audience to a new market and to grow our staff and provide opportunities to develop more cooks. We wish Nathaniel and the Gravely family much success as we shift our focus to our expanding catering department and growing restaurant.”
The physical food truck will remain on-site at Gravely Brewing and the brewery said in an e-newsletter this week that a new concept will be in place and open in March 2023.
